Tom is the life and soul of Monachyle Mhor. You’re bound to see him on any visit, out foraging for the restaurant, laughing loudly, chatting, helping here, fixing there, tending the kitchen garden. He lives at Monachyle Mhor with his wife Lisa May and is always around keeping things buzzing whenever he can.
Tom took over the hotel from his mum and dad back in 1999, and immediately stepped in as chef. His outstanding food reflects his infectiously gregarious personality – colourful and full of character. Right from the beginning Tom has been an advocate of local food. ‘It’s just how we’ve always lived on the farm – we eat our own produce and from other local producers. It just makes sense,’ he says. He remained head chef at Monachyle for 14 years, handing the reigns to Marysia Paszkowska in 2013, so that he’d have time for all his other ventures – spreading the Mhor name, doing food demos, and giving inspirational talks all over Scotland.
Tom and his brother Dick opened Mhor Fish and Mhor Bread in Callander. Then, with his wife Lisa May and Dick’s wife Mhairi, the Lewis family have since opened Mhor 84 Motel.
Tom has forged many links promoting Scottish food all over Scotland. He organises events like Mhor Festival and outside catering with Mhor to Your Door, relishing the people he meets and produce he tastes along the way. He’s a busy man, but remains fully involved in the kitchen and driving Monachyle with a great positive energy.
Tom and family run the hotel, dreaming up new ventures, new parties to throw in the barn, eclectic ways to decorate a room, or refurbish an old building. Tom is always looking to the new, but remains fiercely protective of what is good about the hotel. Tom’s creativity and drive, together with his family and team, keep Monachyle going. They give the hotel the reputation of not only being a fantastic five-star boutique Scottish getaway, but also a very fun place to be.
